Amazing, delicious, healthy banana bread!
It tastes just as good as it looks and smells!
Preparation Time: 10 Minutes or less
Cooking Time: up to an hour
Ingredients 2 1/2 cups of wholewheat flour
1 1/2 tsp of baking powder
Pinch of salt
1 cup of over ripe bananas (mashed)
1/3 cup of 100% pure maple syrup
3 large eggs
1 tsp of vanilla extract
1 cup of oat milk or natural Greek yogurt
3 1/2 tbs coconut oil (melted)
walnuts and shredded coconut optional.
Pre-heat oven to 160 fan forced or 180 not fan forced.
Grease loaf tin and line with baking paper.
Mash enough over ripe bananas together to form one cup.
Add all the dry ingredients into bowl and mix together.
Add wet ingredients to dry ingredients and mix together until combined nicely.
Pour mixture into loaf tin.
Add shredded coconut on top (optional)
Place in oven for up to and hour, use skewer or fork to test the middle.
