Homemade Crackers

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 10-12 servings

Ingredients
3 cups all-purpose flour or combination of all-purpose and wholewheat flour
2 teaspoons sugar
2 teaspoons salt
4 tablespoons extra-virgin olive oil
1 cup water
Optional topping:
1 tablespoon sesame seeds, 1 tablespoon fennel seeds, 1 tablespoon poppy seeds, 1 teaspoon sea salt

Method
Preheat the oven to 180C and grease a cookie sheet.
Combine the flour and salt together in a large bowl and make a well in the centre.

Pour in the water and the olive oil

Using a knife, cut through the flour until everything is combined.

Turn the dough onto a very lightly floured surface and knead until it is smooth.

Roll out the dough as thinly as possible and place on tray.
Cut into squares with a very sharp knife.

Brush with water or milk and sprinkle with seeds and salt.
Bake the biscuits for about 12 minutes or until they turn golden.
