Homemade Mushroom Crepes

Anyone can make crepes even if you don't own one of those professional hot plates. It's easy to make and doesn't cause a big mess. When people typically think of crepes they expect it to be a dessert, sweet, served with ice-cream but actually crepes are very adaptable. With the perfect crepe recipe you can add in any ingredients or fillings you like, make it sweet or savoury.

This is a recipe for some delicious mushroom crepes perfect for a light lunch or appetizer.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 5 servings

1/2 cup plain flour
1 tsp caster sugar
120ml milk
1 egg
1 tbsp olive oil
400g button mushrooms
1 brown onion
1 tbsp Worcestershire sauce
1 cup grated tasty cheese

Process the flour, sugar, milk and egg in a blender until smooth. Pour the mixture into a jug or container.

Cover with plastic wrap and set aside for 10 minutes.

Dip a piece of paper towel into the olive oil and brush the frying pan over medium heat.

When hot, pour the crepe mixture into the pan just enough to cover the base. Tilt the pan so that the mixture forms a thin film and pour any excess back into the jug.

Cook for 1 minute each side or flip the crepe over when golden.

Slice the mushrooms and onions.

Preheat oven to 200C. Heat olive oil in a frying pan over high heat and add the mushrooms. Cook until the liquid has evaporated.

Add the onions and worchestire sauce, cook for 2 minutes or until the onions have softened.

Spoon the mushroom and onions onto the crepe and top with cheese.

Roll the crepe up and repeat for remaining crepe and mixture. Place it into an ovenproof dish.

Sprinkle crepes with remaining cheese and bake for 15 minutes or until hot.

I think leeks would give an extra flavour rather onions Not sure why sugar would necessary for these savoury crepes ? Lee
Interesting spelling of Sauce name in method photo!

This us a Recipe I would certainly use, as I love Mushrooms!
I usually have them on Toast, or in Soups or..........just about anything! Yay!
