Homemade Potato & Herb Hash Browns

Delicious and easy to make, hash browns are perfect for a weekend brunch or as a dinner side. Rolling the patties a few hours in advance and storing them in the fridge until it's time to cook them can save time during food prep.



Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
7 large potatoes
2 tablespoons of parsley
2 eggs
2 tablespoons plain flour
A pinch of salt

Method

Peel and steam the potatoes until they are just soft, but still slightly firm. Keeping the potatoes slightly firm will make grating them easier, and help the potato pieces keep their form a little.

Once cooked and cool enough to hold, roughly grate the potatoes.

In a mixing bowl, whisk the eggs.

Whisk in the parsley and salt.

Combine the grated potatoes, egg mixture, and flour.





Roll the mixture into small patties, taking about a tablespoon of mixture at a time.



Heat a layer of olive oil in a frying pan.

Gently flatten each patty, then place them into the oil to cook one side.



Cook for 3-4 minutes, or until the bottom side becomes golden.

Flip them over and cook on the other side until golden brown.



Once cooked, drain the hash browns on some paper towel.



Cook the remaining patties. Serve immediately.
