Home-Made Ricotta

Ricotta is a simple and easy-to-make cheese. Who knew cheese making was so easy?

Preparation Time: 5 minutes (Draining Time: 1/2 an hour to 1 hour)
Cooking Time: 20 - 30 minutes
Makes: roughly 800 g

Ingredients
1L Milk
250g plain yogurt
Juice of 1/2 a lemon/ 2 tbsp of white vinegar

Method
Mix all the ingredients in a pot and heat it up to about 93C or until simmering.



Give it a quick stir and turn off the heat. Let it sit and let the curds and whey separate.

While that's heating up, line a colander with 3 layers of paper towels.

When the curds have separated, lift it out of the pot with a slotted spoon and into the lined colander.

Let it drain for about 30 minutes or until you are satisfied with the texture.



(A shorter draining time leads to a creamier ricotta; A longer draining time gives a crumblier texture).

Finally, just store it in any airtight container for future use!



Ricotta tastes great in many recipes or on its own with a little sugar or salt.
