Honey Cake

This is such a yummy cake. It always reminds me of Winnie the Pooh. This is from David Herbert's "Best-ever Baking Recipes".

Preparation Time: 20 minutes
Cooking Time: 60 minutes
Makes: 12 servings


220g unsalted butter
175g honey
100g brown sugar
300g self-raising flour
tsp ground cardamom or cinnamon
tsp ground nutmeg
pinch of salt
3 large eggs

3 tbsp honey
cup flaked almonds

Fondant icing to cover

Preheat oven to 160C and line a 20cm tin.
Heat butter, honey and sugar in a saucepan until combined and melted then allow to cool.
Stir in the flour, cardamom/cinnamon, nutmeg and salt and beat with electric beaters, combining well.
Pour into tin and bake for 50-60 minutes until a skewer inserted comes out clean.
For the topping, place honey and almonds in a saucepan and heat until honey is melted
Spread topping over cake while it is still warm - allow to cool, serve and enjoy!

You could also cover in fondant icing as an optional extra.
