Honey Fairies

Fairy cakes are both naughty and nice. They make you think you're being good because they are smaller than cupcakes, but they are so tasty that you end up having more. That's what happened when I made these delicious honey fairies anyway. Based on the brands I used, each fairy cake is about 76 calories.

Preparation Time: X minutes
Cooking Time: 15 minutes
Makes: 28 servings

Ingredients
250g wholemeal self-raising flour
125g clear wild flower honey
80g margarine
80g natural yoghurt
1 egg

30g light margarine
100 golden icing sugar
30g honey

Method
Pre-heat the oven to 160 ༠C/ 140 ༠C fan/325 ༠F/3 Gas.



Cream the ordinary margarine with 125g of honey.



Beat in the egg.



Beat in the yoghurt and fold in the flour.



Spoon the mixture into fairy cake cases.



Bake in the oven.



Beat the icing sugar, light margarine, and remaining honey together.



Spoon or pipe over the fairy cakes.
