Honey & Ginger Marinated Prawn Stir Fry

This fresh and healthy stir fry is quick and easy to throw together for a colourful, flavour packed dinner the whole family can enjoy.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: 4 servings

To make the marinade
1/4 cup honey
1 teaspoon ground ginger
2 garlic cloves, crushed
2 tablespoons lemon juice

To make the stir fry

750g medium green prawns, peeled, deveined
1 carrot, peeled, cut into matchsticks
1 green capsicum, cut into 3cm pieces
1 cup broccoli florets
1 cup chopped pineapple pieces
Cooked rice, to serve

In a large bowl, combine the honey, ginger, garlic, and lemon juice.

Toss the prawns in the marinade so they are evenly coated. Cover the bowl in plastic wrap and refrigerate for 15 minutes.

Drain the prawns, but keep the remaining marinade.

In a pan over medium heat, stir fry the prawns in batches until cooked through and pink (for 2-3 minutes).

Transfer the cooked prawns to a bowl and set them aside.

Cook the vegetables for 2-3 minutes, or until they become tender.

Add the pineapple and return the prawns to the pan.

Add the leftover marinade and mix it through.

Cook for a further 2-3 minutes, or until the sauce boils and the prawns are cooked all the way through.

Serve on a bed of rice.
