Hot & Sour Chicken Soup

Another wonderful twist on the faithful chicken soup here. Spicy, sour, sweet and tangy, this recipe packs a flavour punch. The use of chilli, garlic and ginger once again provides the trinity of cold and flu fighting ingredients. Let me know what you think!

We always make double as not only does it not last very long, but it also keeps well in winter.



Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
220g thin hokkien noodles
500g chicken breasts, sliced
4 cups chicken stock
1 stalk lemongrass, peeled and trimmed
2 tsp ginger, crushed
2 tsp garlic, crushed
4 spring onions
3 small chillies
4 coriander roots, washed and chopped
2 tsp brown sugar
2 tsp vegetable oil
2 tbs fish sauce
1/3 cup lime juice

Method
Prepare noodles according to packet instructions.
Roughly chop the lemongrass and combine with the ginger, garlic, spring onions, chilli, coriander roots and sugar. Mix well.



In a large pot heat the oil over a medium heat, and add the mixture. Cook gently for 2 minutes.



Add the stock and stir through. Slowly bring to the boil.



Transfer chicken breasts to the pot and simmer until chicken is just cooked through. Remove chicken and slice into diagonal strips.



Combine lime juice and fish sauce and stir through soup. Return the chicken and mix through the noodles to serve.

There is no lime juice in the ingredients list. How much do you use at the end of the recipe please?
