These tasty little star biscuits will delight the children and young at heart. They are perfect for any party or festive occasion.
Preparation Time: 15 minutes plus 30 minutes chilling time
Cooking Time: 10 - 12 minutes
Makes: approx 20
Ingredients 60 g butter, softened
1/2 tsp vanilla essence
1/3 cup sugar
1 tsp milk
2/3 cup SR flour
1/3 cup plain flour
icing sugar/food colouring/sprinkles to decorate (optional)
Cream the butter, sugar and vanilla.
Add the milk and egg and mix well.
Add the SR and plain flour and mix until a soft dough has formed. Transfer the dough to a lightly floured surface and knead for two minutes. Cover the dough and refrigerate for 30 minutes.
Preheat the oven to 180C and line two baking trays with baking paper.
Roll the dough out to 3mm thickness. It is easier to roll if you place the dough between two sheets of baking paper before rolling.
Use a cookie cutter to cut shapes out of your dough and place them 3cm apart on your baking tray. Re-roll any remaining dough and cut out more shapes until all the dough is used.
Bake for 10-12 minutes until lightly golden. Allow the biscuits to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
Once the biscuits have cooled completely, make a really thick icing. I used 1 cup of icing sugar, a couple of drops of food colouring, and added water 1 tsp at a time until it was thick but able to be piped onto the biscuit.
Pour the icing into your piping bag. I used a ziploc bag and snipped one of the corners off.
Pipe the icing onto your biscuits (you can do any pattern you like, I only piped the borders).
Allow to rest until the icing becomes firm before serving.
