Italian Picnic Bread

This quick, yeast free Italian bread is great to take on picnics as all you need to pack are drinks and salad. It has salami, ham, sundried tomatoes, olives and cheese which makes it delicious. It can be made gluten and lactose free.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 1 large bread

Picnics made easy with this Italian bread


Ingredients
3 1/2 cups flour (gluten free, if required)
1 tsp salt
2 tsp oregano
1 tsp thyme
1 1/4 tbsp baking powder
1 garlic clove, crushed
150 g salami, chopped
150 g ham, chopped
1/2 cup sundried tomato, sliced
1/2 cup kalamata olives, sliced
1 cup grated cheese (lactose free, if required)
1/4 tbsp olive oil
1/3 cup oil from sundried tomatoes
1 cup warm water

Method
Preheat the oven to 210C and line a baking tray with baking paper.
Whisk the flour, salt, oregano, thyme and baking powder to combine.
Add the garlic, salami, ham, sundried tomatoes, olives and cheese and stir to combine.
Pour in the olive and 1/4 cup sundried tomato oil and 1 cup water and stir to combine.

Add the oil and stir before adding water

Knead gently for 5 minutes and add more water if necessary to hold the dough together.
Make the dough into a large circle, coat the dough with the remaining sundried tomato oil and bake for 35 minutes or until the bread sounds hollow when tapped.
