Italian-Style BBQ Sauce

A homemade, tasty BBQ sauce that makes a great accompaniment to plainly cooked meat, poultry, fish, vegetable and eggs, and works superbly well as the basis for braised dishes, stews and layered bakes. It's also the perfect topping for pasta, essential for classic pizzas and make a delicious hot or cold dipping sauce for all kinds of vegetables and fritters.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 3 cups

Ingredients
25g olive oil butter
2 tbsp olive oil
1 red onion
2 garlic cloves
1 celery stick
2 fresh red chillies
400g canned chopped tomatoes
2 tbsp tomato puree
1 tsp mustard powder
1 bay leaf
2 tbsp Worcestershire sauce
3 tbsp honey
1 tbsp wine vinegar
salt and pepper

Method
In a food processor, blend the onion, garlic, celery & chillies until almost smooth.

Melt the butter with the oil in a saucepan. Add the blended onion, garlic, celery & chillies and cook over a low heat, stirring occasionally, for 5 minutes, until softened.



Stir in the tomatoes, tomato puree, mustard powder, bay leaf, Worcestershire sauce, honey and vinegar and season to taste with salt and pepper.



Increase the heat to medium and being to the boil, then reduce the heat and simmer, stirring occasionally, for 15-20 minutes, until thickened.



Remove the pan from the heat and leave to cool slightly. Remove and discard the bay leaf, then transfer the sauce to a sauce jug and ready to serve or use in other cookings.
