We recently enjoyed a fantastic weekend away with a group of friends at Jacaranda Creek Farmstay in the Noosa Hinterland, near Brisbane. Owner Kerrie Bryant-Adams prepared an amazing home cooked breakfast in the morning. Her cranberry bircher muesli was excellent and everyone in our party came home with the recipe. Here is my version of Kerrie's dish.
Ingredients 2 cups rolled oats
1 cup cranberry juice
1 cup yoghurt
2 tbs honey
1/4 cup dried cranberries
1/4 cup pepitas
1/4 cup chopped apricots
1 green apple
1/4 tsp cinnamon
1/4 tsp nutmeg
Kerrie's recipe also used 1/3 cup flaked almonds. I couldn't get these at my local supermarket so my version leaves these out
Ingredients ready to go. I couldn't get flaked almonds so I left these in my version
Grate the apple with the skin on
Add all the ingredients to a large bowl and stir
Combine all of the ingredients
Ready to soak overnight in the refrigerator
Cover and chill overnight
Serve the next morning with extra yoghurt and a sprinkle of pepitas or some fresh fruit
Delicious healthy breakfast
The bircher muesli will last refrigerated for 2 days. You can add some extra juice or yoghurt before serving if the muesli becomes too thick.
Jacaranda Creek Farmstay and B&B is located in Eumundi, about 2 hours drive from Brisbane. There are three lovely homestay rooms and three self contained studios. Kerrie and Barry were great hosts and our kids loved meeting the Farmstay animals including cows, alpacas and chickens.
