This slice is so easy and delicious. It is a healthier version made with chickpeas as a base. It is dairy free, gluten free and has no excess sugar added. Each slice had less then 100 calories and is much better for you then the classic jam and coconut slice.
Ingredients 1 Egg
1 Egg White
1 tbls Vanilla Essence
2 tbls good Jam (I used homemade strawberry and rhubarb)
3 tbls Moist Coconut
1 can of Chickpeas
Blend 1 can of drained chickpeas with the whole egg, vanilla essence and 1 tablespoon of coconut.
Blend until Creamy
Pour into a lined loaf tray and bake at 180 for 15 minutes.
Take the cooked base out of the oven and spread with a layer of jam. Don't be fruggle with the jam as this is the only 'sweet and sugary' element.
Beautiful homemade Jam
Mix the egg white with the remaining coconut and spread across the jam layer. (Note: in the picture I used a whole egg but the coconut layer doesn't look as nice. Using just an egg white keeps the coconut white.)

Return to the oven and cook for another 10 mins until the coconut has gone golden brown.
Cut into squares and eat warm. It is also nice cooled and lasts for days.
