Kale & Feta Cheese Gozleme

Gozlemes is synonym to outdoor market in Sydney where you will see ladies in white rolling and making gozleme while you wait.

Instead of the typical Spinach & Feta Gozleme commonly sold at the market, I've decided to make my own version - kale & feta cheese gozleme with smoky BBQ beef sausages.

It tastes so good and it is very healthy at the same time! A good nutritious snack to have at any time - even for breakfast! Perhaps I can set up my own food stall at the market :)

Preparation Time: 40 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Kale & Feta Filling:
1 bunch kale leaves
150g Danish feta cheese
1 egg
1 lemon
Salt & Pepper to season

For the Dough:
2 cups plain flour
3/4 cup water
1/4 cup organic flax seed oil (You can use any oil)
1 teaspoon salt

Beef Filling:
200g smoky beef & bacon sausages (optional)

Wash and discard the hard Kale stems. Tear kale leaves into bite-able size.
Pat dry and set aside.

To make the dough:
Sift flour and salt together into a large bowl.
Slowly add the add the water & flaxseed oil and mix to combine into a firm ball.

Knead the dough on a flour surface for 10 minutes until silky smooth and elastic.
Place the dough back in bowl to rest for 30 minutes.
In the meantime make the Kale and Cheese mixture.
Combine chopped Kale leaves and crumbled feta in a large stainless mixing bowl.

Add in an egg. Mix well to combine.

Once the dough has rested, divided into 4 equal parts.

Roll out each part as thin as possible and as wide as possible using a rolling pin.

Add the Kale & feta cheese mixture on top of the stretched dough.
Then scattered cooked smoky beef sausage pieces on top. (optional)

Lift one end and fold in half. Seal the edges with the pressure of your fingers.

Tip: Avoid tucking the edges in as it will create a thick doughy edges.
The dough is fairly easy to work, it doesn't shrink too much or stick to the surface.
Heat fry pan on medium high and grease well with olive oil.

Shallow pan fry the Gozleme until golden.
Spray with more oil if necessary.
Flip and fry the other side.

There! The first kale & feta gozleme is ready!

Slice into 8 pieces and serve with fresh squeezed lemon juice.

Enjoy while hot & crispy.

We are totally addicted to this delicious, healthy Turkish savoury street snack. I am feeling pretty proud with this concoction of mine.

Serve with some kale chips on the side for the perfect crunchy accompaniment.
