Kashmiri Pulav

Kashmiri Pulav is a tasty and a fragrant rice dish which is adored with many dry fruits. It makes a good meal for a weekend or a brunch.



Kashmiri Pulav


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients
1 cup Basmati rice. Measurement: 1 cup =250 ml
2 onions
2 tablespoons ghee
1 bay leaf
3 cardamom
4 cloves
2 green chilly
1 inch cinnamon
1 teaspoon cumin
1/4 teaspoon fennel powder
4-5 strands saffron
1 tablespoon warm milk
2 tablespoon mint leaves
salt to taste
6 cashewnuts
10 raisins
Apple pieces (optional)
Grapes (optional)

Method
Cook the rice in a pressure cooker and keep it aside. The grains should be separate. The quantity of water added to the rice differs from rice to rice. I used two cups of water
Soak the saffron strands in warm milk.
Spread the rice in a wide plate. Add the soaked saffron to it.
*Place ghee in a pan, add the cumin and let it splutter. Then add, cardamom, cloves, cinnamon and bay leaf. Put half the quantity of onions and saute it.
Add the dry fruit pieces and give a stir.
Finally, add the fennel powder and mint leaves and remove from flame.
Add the cooked rice to it. Sprinkle salt.
Mix well.
Heat some oil in a small pan. Fry the remaining onions on a medium flame, otherwise they will get burnt. You should keep stirring it for even cooking.
Garnish the rice with these onions. You can also add fruit pieces for this pulav.
Kashmiri pulav is ready to serve. Serve with any gravy or dal
