Considered to be the ultimate Ayurvedic dish, this nourishing and balanced meal is perfect for a wholesome detox dinner or reliable energy boost at lunch.

You can substitute the green beans and avocado for other green vegetables if you prefer, but generally these two are easy on the digestive system as well as providing significant nutritional benefits.

This dish is best served immediately after cooking, though does last well refrigerated.

Cooking Time: 30 minutes
Makes: 1 servings

1/4 cup brown rice
1/4 cup yellow mung beans or red lentils
1/2 tsp ground turmeric
1 tsp ground cumin
10 green beans, top and tailed, cut in half
1/2 avocado, sliced
1 tbsp extra-virgin olive oil

Place the rice, mung beans/ lentils, turmeric, cumin and 2 cups of water in a small saucepan over a medium heat. Bring to the boil then reduce to a simmer and cover for 20 minutes.

Add the green beans and continue to cook for a further 10 minutes or until beans are tender and dark green. Remove from heat and drain any excess water.

To serve, top with sliced avocado and drizzle with the oil. Season with cracked black pepper if desired.
