Lactose Free Chicken Carbonara

Lactose Free Chicken Carbonara
Do not miss out with this lactose free chicken carbonara

This delicious take on carbonara is lactose free and can be made gluten free, which means no one in my family misses out. The cheese, eggs and milk combine to make a creamy sauce.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

400 g pasta, fettuccine or spirals (gluten free if required)
1 chicken breast, cubed
150 g ham (or 4 rashes of bacon), sliced
2 cloves garlic, crushed
2 tbsp olive oil
1 1/4 cups finely grated cheese (lactose free)
200 ml milk (lactose free)
2 eggs and 2 yolks, beaten
1/4 cup flat leaf parsley, finely chopped
Salt and crushed pepper, to taste

Cook the pasta in boiling salted water for 1 minute less than the packet instructions. Drain the pasta, reserving 1/4 cup of the pasta water, and set aside.
While the pasta is cooking, heat 1 tbsp of olive oil in a fry pan and fry the garlic for 1 minute. Add the ham and saute for 2-3 minutes until browned.

The ham can be substituted for pancetta or bacon

Add the chicken to the fry pan and brown. Transfer the chicken and ham mixture to a bowl and return the fry pan to the heat.
Add the reserved pasta water, eggs, cheese and milk into a bowl. Season with salt and pepper and stir until combined.

Finely grated cheese
Finely grated lactose free cheese and ham works well in the carbonara

Add the remaining olive oil into the fry pan and add the pasta, chicken and ham mixture. Stir to combine for 30 seconds.
Add the parsley, egg, cheese and milk mixture to the pasta. Stir to combine until a creamy sauce evenly coats the pasta, about 1 minute.
Season with salt and pepper, to taste. Serve immediately.

Lactose Free Chicken Carbonara delicious and easy
The heat from the pan will slightly cook the egg and melt the cheese to give a creamy consistency

Exclude the milk and add 1 1/2 cups of finely grated lactose free cheese.
