Lamb Cutlets with Chives and Mustard

These lamb cutlets are a quick simple healthy meal that can impress anyone. There are about 139 calories per lamb cutlet.

Ingredients
1 Shallot
6 Lamb Cutlets
Mild Dijon Mustard
Parsley
Chives
1 Beef Stock Cube

Method
Dissolve the beef stock cube with some olive oil to make a paste.

Season the Lamb cutlets with the paste on one side and use olive oil for the other side.



Place the lamb cutlets onto a hot griddle for 2 minutes on each side.



Brush some Dijon mustard onto one side of the lamb and dip onto some chives mustard side down.

Sprinkle some raw diced shallots and parsley.
