Still an Aussie Favourite

Preparation Time: 60 minutes
Cooking Time: 30minutes
Makes: 8-12servings

The finished product

2cups All plain flour
1/2cup Sugar
1cup Unsweetened condensed milk
150g Butter
1tsp Baking powder
1/2tsp Baking Soda
1tsp Vanilla Essence
1/2cup Milk
1/4 cup vegetable oil

Chocolate Icing:
4 cups (454 grams) icing sugar, sifted
1/3 cup (30 grams) unsweetened cocoa powder
3 tablespoons (42 grams) unsalted butter
1/2 cup (120 ml) milk
2 cups (480 ml) large shredded coconut or desiccated coconut

Method - cake
Preheat the oven to 160c,
Grease and flour a ring shaped cake tin (or square
Beat butter and sugar until creamy.
Add condensed milk,vanilla essence,milk and beat until soft.
In a separate bowl sift the flour, baking soda and baking powder.
Add the dry ingredients to the wet ingredients ,mix well but don't overmix.
Pour mixture to the cake tin and bake in middle rack for 20 minutes until skewer inserted comes out clean.
Keep aside and let the cake gets completely cool on wire rack.
Then cut into large pieces or squares

Method - chocolate icing
Place icing sugar, cocoa powder, butter and milk in a heatproof bowl over a saucepan of simmering water.
Stir until it becomes smooth and of pouring consistency.

Method - to assemble
Have the cakes and chocolate icing on hand
Pour the coconut on a large plate
Position on bench in this order Cake. Icing, Coconut
Spoon the chocolate frosting over the cake, making sure you cover all sides.
Transfer the cake to the coconut and roll the cake in the coconut, covering all sides.
Transfer the lamington onto a wire rack that is placed over a baking sheet (to catch the drips) to set
Repeat with the rest of the cake squares.
Once the Lamingtons have set, store in an airtight container for several days.
