Leave Skin On Potato Salad

I have always wondered why people peel the potato when making potato salad! The skin contains so many good and super healthy nutrients. So, here is my tweaked version of potato salad with oh so good skin on!

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients

Salad
4 cups cubed potatoes
1 can chicken broth

Dressing
2 cups mayonnaise
1 cup mustard
1 cup sweet pickle relish
Dash of salt
Dash of black pepper
Dash of celery seed

Method

Salad:
Combine potatoes and broth in medium saucepan.

Bring to a boil.
Cover and cook about 10 minutes.
Drain.

Dressing:
In large bowl, mix together dressing ingredients.

Together:
Add cooled potatoes to dressing..
Toss to combine.
Chill before serving.
