Lemon and Blueberry Cheesecake

A mix and make cheesecake...without the cake part.

No flour, no baking, no biscuit crumbs, very little sugar - just 5 ingredients.

Super quick and easy, and satisfying for your dessert stomach.



Lemon blueberries coconut

Preparation Time: 5 minutes
Chilling Time: 10 minutes
Makes: 16 servings

Ingredients
250g cream cheese
2 cups desiccated coconut, plus 1 tablespoon extra
Grated zest and juice of one lemon
2 tablespoons honey
1/4 cup blueberries (thawed or fresh)

Method
Line a square cake tin with plastic wrap.
Add all ingredients except the blueberries to a food processor, and blend until smooth.

Add the blueberries and pulse very briefly, to maintain the two-colour effect.
Spoon into the cake tin and press down firmly with the back of a metal spoon.
Sprinkle extra coconut on top and press down onto the mixture.

Ready to chill, then eat

Chill in the freezer for 10 minutes before cutting and serving, or store in the fridge.
