Lemon Cake

This luscious lemon cake is a pure sunshine brightness that will bring a nice twist to your usual afternoon cake. Packed with flavors, it is easy to make and is served for tea or dessert.

Preparation Time: 30 minutes
Cooking Time: 45 minutes
Makes: 8 servings

Ingredients
1 1/2 cup of self raising flour
1/2 cup margarine
3/4 cup sugar
2 large eggs
juice of 1 lemon
1/2 tsp vanilla essence
100 ml milk
zest of 1 lemon
2 level tsp baking powder
1/2 tsp salt

Method
Preheat oven at 180c and lightly grease a baking tin.
Cream sugar and butter.
Add eggs one by one and beat again for 12-15 minutes.
Add in flour, baking powder and salt.

Beat in dry ingredients


Add milk and vanilla essence and beat for a few more minutes.

Add milk to mixture and beat well


Mix in lemon juice and zest.

Add in lemon juice and zest, taking care not to allow mixture to curdle by beating quickly


Mixture must look like this after all beating is done


Pour in baking tin and bake for 30-45 minutes or until done.

Make the lemon icing by adding 2 tsp of lemon juice and 2 tsp of water with 1 cup of icing sugar. You may have to adjust with icing sugar if it is too runny or with water if it is too thick.

Pour over the cake when still warm and sprinkle with a few grated lemon rinds.

You may as we'll serve it with a dollop of whipped cream for dessert.
