Ingredients 1 cup protein powder (vanilla or plain)
3/4 cup almond meal
1/2 cup coconut flour
1/2 cup desiccated coconut
3 flax eggs
9 tbsp water
1/4 cup maple syrup
1/2 cup freshly lemon juice (including pulp)
Zest from 1 lemon
2 tablespoons chia seeds
Optional - extra coconut or icing sugar to sprinkle on top.
Preheat your oven to 180°C. Grease and line a square baking tin.
Prepare the flax egg, this takes 15 minutes to set. Simply mix the flax meal with the water and set aside.
In a separate large bowl combine the protein powder with the almond meal, coconut flour and desiccated coconut.
Add the maple syrup, lemon juice, zest, and chia seeds to the bowl and mix well. Add in the flax egg mix once set and mix.
Pour the lemony dough into the baking tray and smooth out.
Bake for 30 minutes, or until skewer inserted in the middle comes out clean.
Allow to cool completely in the tin then remove and cut into squares or bars.
