Ingredients 1 tin sweetened condensed milk
Grated rind of 2 medium lemons
Juice from 2 medium lemons
220 g creme fraiche (this was a guess and I think it was actually sour cream in mum's original recipe)
2 egg whites
2 tsp caster sugar
Mascarpone to garnish (optional)
Grate the lemon into fine pieces as per the photo.
Put the condensed milk into a mixing bowl, and slowly beat in the creme fraiche, grated rind and lemon juice.
Mix until it is well combined.
Beat the egg whites until they are stiff, and gradually add the sugar, beating until the whites have firm peaks.
Fold these egg whites gently into the condensed milk mixture using a metal spoon.
Transfer the mousse into 4 or 5 sweet dishes and put in the fridge for about 4 hours.
Decorate with either a thin piece of lemon or some mint.
I also added some blueberries, as well as the mascarpone
