Lemon Delicious Slice

This zesty slice is sure to be a hit among your family and friends. It is a great alternative to the traditional lemon slice and is fantastic for lunch boxes.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 24 pieces

150 g unsalted butter, melted and cooled
1/2 tsp vanilla extract
1/3 cup caster sugar
1 tbs cornflour
1 1/3 cups plain flour
4 eggs
1 tsp lemon zest
1/3 cup plain flour
1 1/3 cups caster sugar
2/3 cup lemon juice
icing sugar, to serve

Preheat oven to 180C and line a slice pan with baking paper.
To make the base, combine the butter, vanilla, sugar, cornflour and plain flour. Mix to form a dough. Press the dough firmly into your prepared slice pan.

Bake for 15 - 20 minutes or until the dough has turned golden. Set aside to cool.

To make the filling, place the eggs, lemon zest, plain flour and caster sugar in a bowl. Whisk to combine.

Add in the lemon juice and whisk until combined. Pour the mixture over the top of the base and bake for 15 minutes or until just set.

Cool completely in the pan.

Dust with icing sugar, then cut into slices and serve.
