Lemon Ginger Chicken

This simple chicken dish proves you can easily make a nourishing and flavoursome dish in well less than 30 minutes. The smothering of zesty lemon/ginger sauce complements the tender chicken pieces, and served here with mixed grain quinoa and a sprinkle of chopped vegies, you can ensure a well rounded meal sure to satisfy.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4 servings

500 g chicken breasts, sliced
3 tbsp light soy sauce
1 tbsp Chinese rice wine
1 tbsp peanut oil

zest and juice of a small lemon
2 tsp sesame oil
2 tsp caster sugar
2 tbsp ginger, minced
2 tbsp cornflour, stirred into 2 tbsp water
4 spring onions, finely chopped

Marinate the chicken with the soy sauce, rice wine and peanut oil. Set aside for as long as desired.

Letting it soak up the flavours

Heat a large frying pan over a medium heat and cook the chicken until just cooked through.

Add all remaining ingredients to the pan, leaving half of the spring onions for serving.

A one pot wonder

Stir through and reduce the heat to simmer until the sauce has thickened and covers the chicken in a homogenous layer.

Serve with rice or quinoa (as pictured) and top with remaining spring onions.
