Lemon Meringue Pie

An impressive Lemon Meringue Pie with the world's easiest curd.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 8 servings

Ingredients
1 sheet of short crust pastry

Filling
400ml condensed milk
1 cup of lemon juice
Rind of 1/2 lemon
4 egg yolks

Meringue
6 egg whites
1 cup castor sugar

Butter to grease the dish

Method


Lemon Meringue Pie


Preheat your oven to 180 degrees

Grease a tin or baking dish with the butter and line it with your pastry. Allow for a small overhang as the pastry will shrink.

Using rice, pasta or pastry weights, blind bake the pastry for 15 mins.

While the pastry is baking, prepare the curd.

Simply combine the lemon juice, rind, egg yolks and condensed milk in a bowl. Mix together.

In another bowl start to beat your egg whites. Slowly add the castor sugar, a little at a time. Beat until the mix is forming glossy peaks.

Once the pastry has been in the oven for 15 mins, remove the weights and add the filling.

Even spread the curd in the pastry and then layer the meringue on top.

With your spoon, create small peaks on top of the pie.

Return the pie to the oven and bake for a further 20 mins or until the peaks turn golden brown.

Serve with cream or icecream.
