Lemon Sago Pudding is an easy, nutritious snack or dessert to prepare. Sago is processed from South East Asian Sago Palms and it is often boiled in Malaysia with coconut milk, however this recipe just uses lemon and brown sugar. It can be made to be quite runny (using more water) or quite jelly like (using less water), depending on your personal preference. The consistency of this recipe is right in the middle. I just love the chewy "pearls" and the zingy taste of the lemons.

Lemon Sago Pudding
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 6 small servings
Ingredients
1 cup uncooked sago pearls
Juice of 1-2 lemons (depending on taste)
1 cup filtered water
1/2 cup brown sugar

Method
Juice the lemon/s (use 2 for extra "zing") and add to the filtered water. In a medium sized saucepan, bring the filtered water to the boil, then add the brown sugar.

When the brown sugar has dissolved, reduce the heat and add the sago pearls, stirring constantly to ensure they do not stick the the base of your saucepan.
Stir for around 20 minutes or until the sago pearls become transparent.
Serve hot or cold in individual bowls or ramekins with a dollop of yoghurt. Enjoy.
