Lentil and Orange Soup

This is a great comforting winter warmer. Preparation takes about 15 minutes and cooking takes about another 45. The ingredients feed four people, but it's an easy job to multiply up the ingredients so that you can satisfy even more hungry appetites.

Ingredients

1 tbsp olive oil
1 onion, diced
1 stick of celery, chopped
1 carrot, grated
100g red lentils
100ml orange juice
750ml vegetable stock
Salt and pepper to taste



Lentil and Orange Soup


Method

Heat the oil in a medium or large saucepan.

Add the onion and stir for a minute or two until soft.

Add the celery and then the carrot, stirring for another minute or two.

Add the lentils and turn with the other ingredients for a minute or so.

Pour in the orange juice and stock, bring to a boil and then turn down to a simmer for about 45 minutes, or until everything is soft.



Lentil and Orange Soup


Pour into a liquidiser and blend until smooth (or zuzz with a stick blender). Alternatively you can just liquidise half of the soup so that you're left with some texture.
