Lentil Soup with Chorizo Sausage

Lentil soup with chorizo is a traditional Spanish dish, very tasty and pretty easy to make. I recommend you to give it a try.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

200 g lentil (soaked 1/2 hour)
50 g chorizo
1 chopped onion
1 big carrot
1/2 bell pepper
Salt and freshly ground pepper
2 bay leaves
1 teaspoon of tomato paste
1 teaspoon of paprika

Pour the lentil into a strainer and wash it in cold water and then let it soak for 30 minutes. In the meantime, slice the chorizo and cut the vegetables into small pieces.
In a big pot, add the chorizo and fry it for 2 minutes, without any oil, because the sausage releases its own fat and it’s enough to cook the vegetables.

Add the vegetables and saute everything for 10 minutes. Season with salt, pepper, tomato paste and paprika. Take the pot off the heat and stir for a few seconds so that the paprika does not burn.

Add the lentils, the bay leaves and 3 L of water. Bring the soup to a boil and let it simmer until the vegetables and the lentils are cooked through, approximately 30 minutes.
Serve warm along with pickles.
