Light and Delicious Chocolate Cake

This cake is perfect for every occasion. Simple, quick and easy, light and delicious. Lets start.

Preparation Time: 25 minutes
Cooking Time: 17 minutes
Makes: 8 servings

1 cup flour
2 eggs
1/2 cup caster sugar
1/4 cup milk (room temperature)
100g melted unsalted butter, cooled
1 1/2 tsp baking powder
1 tsp vanilla essence
1 1/2 tbsp cocoa powder
1/4 cup chopped walnuts to sprinkle

250g icing sugar(you can add less sugar depending on your taste)
25g melted butter
2 1/2 tbsp black coffee
1 tsp vanilla essence
1/2 tbsp cocoa powder

Preheat the oven to 200 C(fan force).

Beat the eggs and caster sugar in a bowl until combined and foamy.

Add the dry ingredients(flour, baking powder, cocoa powder) to the egg mixture and use a wooden spoon to stir until combined.

Add milk and vanilla essence and mix well.

Add the cooled melted butter and mix well. The consistency of the cake mixture should be like pancake mix.

Pour the mixture into a 23cm round baking tin(the removable bottom ones) and bake for 17 minutes or until a skewer/toothpick inserted into the centre of the cake comes out clean.

Leave in the tin to cool.

To make the frosting, melt the butter and cocoa powder in a small non-stick pot over low heat.

Add black coffee and vanilla essence and mix well.
Add the icing sugar and stir until smooth.

Pour the frosting onto the cake. Do this evenly and fast as the frosting turns hard quickly.

Sprinkle walnuts before the frosting turns hard.

This cake will keep for 5 days in a sealed container. Taste best in the first 2 days as the frosting may soften in the container.
