Ingredients
2 cups all-purpose flour
¼ cup and 3 tbsp caster sugar
½ tsp salt
4 tsp baking powder
Zest from 1 lemon
115g butter, chilled and cubed
1 large egg
¾ cup milk
1-½ cup fresh or frozen blueberries
Method
Preheat oven to 180°C. Line 12-hole muffin pan with paper cases or grease well with butter
In a large bowl add the flour and using your fingertips, rub butter into flour until mixture resembles fine breadcrumbs
Mix in sugar, baking powder, salt and zest to the flour mixture
Separately, whisk together the milk and egg; stir into the dry ingredients
Gently fold in the blueberries with a spatula, taking care not to squash them
Evenly spoon the batter into the muffin liners
Bake for 20-25 minutes or until lightly golden. Serve warm!
