Light Fluffy Gluten Free Sponge Cakes are a perfect morning or afternoon tea treat

These sponge cupcakes are light, fluffy and perfect for those who need a gluten and lactose free cupcake or are on a low FODMAP eating plan. Serve as morning or afternoon tea with cream, coconut yoghurt or ice cream and fresh berries.

Preparation Time: 20 minutes
Cooking Time: 12 minutes
Serves: 24

Ingredients
5 eggs
1/2 cup caster sugar
1 1/2 cups cornflour (gluten free)
1 1/2 tbsp baking powder
Fresh strawberries and blueberries to serve (optional)
Cream or yoghurt to serve (optional)
Icing sugar, for dusting (optional)

Method
Preheat the oven to 180 degrees. Put cupcake patty liners into the muffin tray.
Beat the eggs for 8 - 10 minutes with an electric mixer until the eggs triple in size and look thick and creamy.

Continue to beat the mixture and add the sugar, 1 tablespoon at a time until all the sugar dissolves.
Sift the cornflour and baking powder together four times. This will help to make the sponge extra fluffy.
Sift the combined cornflour and baking powder into the egg mixture and gently combine by folding the mixture. Take care to remove any lumps.

Gently spoon the mixture into the patty liners.

The mixture will look fluffy when spooned into the patty liners.


Bake for 10 - 12 minutes or until sponge springs back when touched. Turn oven off, open door and leave cupcakes in for 1 minute.



The cupcakes will look golden when cooked and will spring back when touched


Turn out the cupcakes on wire rack to cool.
Serve with cream, coconut yoghurt or ice cream and fresh berries.

Tips
These cupcakes also taste delicious with a vanilla glaze.
Leaving the cupcakes in the oven with the door open for 1 minute reduces the cupcakes from sinking in the middle.
