Little Big Breakfast

eggs, tomatoes, toast, roast beef, breakfast, english breakfast

A smaller and healthier version of big breakfast. Nothing is fried, and the most technical form of cooking is pressing a button. It is a quick, easy and delicious way to start the day.

Preparation Time: 5 minutes
Cooking Time: 4 minutes
Serves: 1

2 eggs
2 slices of bread
4-6 sun dried tomatoes in olive oil
10g butter
2 thin slices of roast beef
pinch of salt

Crack the eggs, pierce the eggs, and cook in the microwave for two minutes.
Toast the bread in a toaster and place one slice on top of each slice of roast beef.
Place the sun dried tomatoes on top of the toast, so that the olive oil soaks in.
Place the eggs on top with a dollop of butter and pinch of salt.
