Low Fat, Low Sugar, Tasty Fudge

This is a healthier version of traditional fudge, and a great way to use up bananas past their use by date. They're good for a snack or a dinner party dessert (though you may want to double the recipe for the latter).

Chia seeds boost the "health factor" of this dish, as they are high in dietary fibre, antioxidants, iron, calcium and potassium, contain vitamins A, B, C & E and have a protective benefit against cancer.



Low fat low sugar chocolate banana fudge


I use organic peanut butter, which only contains peanuts. If you use a different variety, the added sugar and/or salt will affect the overall taste (perhaps to your liking).

If you're after something a little sweeter, add a tablespoon of honey to the mix.

Preparation Time: 5 minutes (plus overnight)
Makes: 8 mini slices

Ingredients
1 overripe banana
1/4 cup cacao powder (or cocoa powder)
3 tbsp organic crunchy peanut butter
1 tbsp chia seeds
1/2 tsp vanilla extract

Method
Peel the banana and place in a large bowl. Using a fork, mash until smooth.

Add all the other ingredients and combine well.

Spoon the mixture into a plastic container and flatten the top. (If you want a bit of texture on the top, you can make little waves with the back of a spoon.)

Leave overnight in the fridge with no lid. Gently push out the fudge, then cut into slices.

Keep in the fridge in a container (with the lid on).
