Ingredients 2 large green apples (400g) pealed and chopped finely
1 cup finely chopped dates
1 teaspoon bicarbonate soda
1 cup boiling water
1 teaspoon vanilla essence
1 cup caster sugar
1 1/2 cups plain flour
1 tablespoon caster sugar
sprinkle desired amount of cinnamon
Preheat oven to moderate and grease a cake tin, then place baking paper in base of tin.
Add apple, dates, bicarbonate soda and boiling water into a medium sized bowl, then cover for 10 minutes.
Then while the apple is softening (use a large bowl) beat butter to a cream and add essence, sugar and egg then beat with an electric mixer until light and fluffy.
Combine both mixtures and flour then stir until everything is mixed and ready to be placed into the tin. Bake for 45-50 minutes until cake is cooked.
Once cake is cooked and cooled, combine caster sugar and cinnamon in a cup and sprinkle desired amount over cake for extra flavoring.
This sounds so delicious and relatively easy to make; also looks spectacular! Any way wholemeal flour (for a bit more fibre) might work? Also, do you think using brown sugar would work too? Possibly retaining the caster sugar for the top, if this works best??? c&c
The Lumberjack Cake sounds lovely but when you read the description of how to make it there is no way it will look like the picture. There is no reference to placing the apples separately on the top. Also, how will the cinnamon sugar mixture stick to the cake if it is cooled?
