Macadamia And Lemon Dukkah Crusted Salmon With Honey And Red Wine Vinegar Dressing

This macadamia and lemon Dukkah crusted salmon is complemented by a fresh cucumber and mint salad, and a sweet honey and red wine vinegar dressing. The lemon zest gives the crust a nice citrus twist. This recipe is gluten free and low FODMAP.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2

Ingredients
2 salmon portions, skin off, tail end
8 tbsp roasted macadamia dukkah recipe
1 lemon, zested and juiced
2 tbsp honey
2 tbsp red wine vinegar
1 tbsp olive oil
1/2 cucumber cut into long fine strips or spiralled.
1 tomato, cut
1/4 cup mint, finely cut.
2 cos lettuce leaf cups or small iceberg lettuce leaf cups

Method
Preheat oven to 220 degrees. Place baking paper in a baking dish.
Whisk the honey, red wine vinegar and olive oil until combined, set aside.

Combine the lemon zest with roasted macadamia dukkah, and set aside.
Place salmon in the baking dish and lightly brush the surface with the lemon juice.
Sprinkle 4 tbsp of the combined roasted macadamia dukkah and lemon zest on top of the salmon. Place in oven for 11 minutes.

The Dukkah crust should be brown when cooked.


In a bowl, combine the tomato, cucumber, mint and 1 tbsp of the honey and red wine vinegar dressing. Put the remaining dressing in two serving bowls on the plate.
Place the lettuce cups on plate and spoon equal portions of the salad into the lettuce cups.

Lettuce cups are a nice way to present the salad and more interesting that cut leaves.


Gently lift the salmon out of the baking dish with a spatula, taking care not to break it. Serve on a plate next to the salad and dressing.
