Mackerel and Greens

Mackerel is a fantastic source of omega 3, essential for keeping skin plump, hair and nails shiny, not to mention it being an ideal source of protein. Often cheap to buy and easy to cook, mackerel, coupled with a few greens makes a delicious meal, for the laziest cook.

Preparation Time: 2 minutes
Cooking Time: 12 minutes
Makes: 2 servings

4 mackerel fillets
10 fresh spring green leaves
Half a lime
5 sprigs of lemon thyme
Half tsp ground black pepper
Tlbsp olive oil
Half tsp ground garlic
required ingredients

Season the mackerel and squeeze the lime on to the fillets.

Ensure the fillets are evenly seasoned and place under the grill over a medium heat for 12 minutes.

Wash and roughly slice the greens.

Place in a sieve on top of a saucepan of boiling water. Cover with a lid and cook for 10 minutes.

Remove the fish from the grill.

Remove the lid from the saucepan - the greens should be wilted.

Plate up.
