Maize Flatbreads

It's a good idea to learn to incorporate other types of flour into foods we normally prepare using exclusively wheat flour. This helps improve the nutritional quality of dishes we already enjoy.

Maize flour is an excellent option for this, adding subtle taste as well as protein to many baked goods.

In this flat bread recipe it makes the dough more difficult to work with, but the satisfying fragrance and hint of corn flavour it gives, makes it all worth it.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Serves: 1

Ingredients
1 cup of maize flour
1 cup of plain wheat flour
1/2 cup of boiling hot water
Extra oil for kneading and cooking

Method
Place maize flour and wheat flour in a large bowl and mix

Mix boiling hot water into the flour using a spoon.

Allow the mixture to cool for a minute and then draw the dough into a ball and with a little oil on your hands knead the dough till it becomes a little more elastic.

Divide the mixture into 4 sections.

Roll each ball out into a circle. This dough is more crumbly than regular dough so don't roll the flat breads too large or thin.

Heat a frying pan or griddle and coat surface with a very small amount of oil.

When the surface is smoking hot place the flat bread on it.

Turn over after around 10 seconds and then cook on the other side till dark brown spots appear.

Turn the flat bread once more and cook to the same stage.

Serve with spicy Indian curries and chutneys.
