Maize flour roti with mustard leaves curry is also called as 'Makke ki roti and Sarson ka Saag'. It is one of the popular dishes in Northern India, prepared during winters. It is very healthy and delicious in taste.
Ingredients for Makke ki Roti (Maize Flour Roti)
1 cup maize flour
1/2 cup fenugreek leaves
1 tsp carom seeds
2 spoon butter
Salt to taste
Ingredients for Saroson ka Saag (Mustard leaves gravy)
Finely chopped mustard leaves
Finely chopped fenugreek leaves
Finely chopped spinach
1 tsp ginger garlic paste
1 finely chopped onion
1/2 tsp red chilli powder
1 pinch turmeric powder
1 tsp cumin seed
1 tsp garam masala
1 tsp oil
Salt to taste
Preparation of Makke ki Roti ( Maize flour roti)
Take Maize flour, carom seeds, fenugreek leaves, little butter and salt in a bowl and mix them together.
Knead the flour by adding very little amount of water to make firm dough. Keep it aside for 10 minutes.
Make small balls of the dough.
Now keep a plastic sheet on the rolling plate. Place the ball on plastic sheet and press it slowly with your hands. Now roll it slowly with the help of rolling pin.
Heat a flat pan and gently remove the roti from the plastic sheet and place it on the pan and apply some butter on it and flip it, when the roti turns light golden brown in colour. Flip it again when the other side turns light brown in colour.
Preparation of Saroson ka Saag ( Mustard leaves curry)
Wash and chop the mustard leaves, spinach and fenugreek leaves.
Boil the above chopped leaves in a pan having 1 cup of water and grind it into a fine paste.
Heat oil in a pan and add finely chopped onion, cook it till it turns golden brown in colour. Then add ginger garlic paste and maize flour and let it cook for 5 minutes.
Now add the leaves paste, turmeric powder, red chilli powder and garam masala to the above mixture and mix it gently.
Cook the above mixture on a low flame by adding half glass of water and let it cook for 5 minutes and Serve it hot with makke ki roti.
