Lana Del Ray coyly sang “I’ve got that summertime, summertime sadness” but there’s no sadness in our household, when it’s Mango season. The Mango is such a transient fruit appearing in desserts, drinks, hot and cold meals and salads.
This Mango & Asparagus salad is so easy to throw together, it’s delicious, quick and easy and very healthy and low in fat. I’ve also been known to use the same ingredients and stir through my special salsa sauce to create a mango salsa!
Mango, Tomato, Asparagus, Avocado and Rocket combine to make this superbly quick, easy and healthy Salad.

Ingredients ˝ Mango
150g Baby Rocket
Bunch of Mini Asparagus
The Key Ingredients of the Mango & Asparagus Salad.
Blanche Asparagus in boiling water for approximately 3-Minutes.
While Asparagus is cooking, roughly slice the Avocado, Tomato and Mango.
In a large bowl, combine the Rocket, Avocado, Tomato and Mango.
Cut Asparagus into quarters and add to the assembled salad.
Serve immediately as a main meal or as a side.
So versatile, this Mango & Asparagus Salad can be eaten as a main meal.
The salad works equally as well when served accompanying a main meal.
