Mango Icy Poles

Beat the heat and be in tropical heaven with these easy lactose free mango icy poles. Great for the kids.



Mango icy pole - 2 ingredient lactose free YUM


Preparation Time: 10 minutes
Cooking Time: 4 hours to set
Serves: 6

Ingredients
3 ripe mangoes diced or 500g frozen mango
250g blueberries (optional)
400 ml coconut milk (lite) OR 2 cups coconut yogurt.

Method
Place mango and coconut milk into a blender and purée until smooth.
Pour mixture and six blueberries into molds.
Freeze overnight or until set.

Tips
Icy pole molds are available at most supermarkets, discount and kitchenware shops.
Use frozen mango for quicker freezing time.
