Mango Mousse Cake

Mangoes are one of the most popular fruits, desserts made with mangoes are twice as popular!

Preparation Time: 15 minutes
Cooking Time: 3 hours refrigeration
Makes: 4 servings

300g canned or fresh mangoes, sliced
200ml thickened cream
100g cream cheese
1/4 cup caster sugar
3 egg yolks
2 tbsp gelatine powder
Juice of one lemon

In a large bowl beat the cream for 2 minutes or until just peak.

Beat the cream cheese and sugar together for 2 minutes or until soft and fluffy.

Beat in the egg until ingredients are combined well.

Transfer the cream into the cream cheese mixture and combine well with a spatula.

Using a fork puree the mango slices.

Add the mango puree into the cream cheese mixture.

Add in the lemon juice.

Melt the gelatine powder in hot water and add into the mango mousse mixture.

Lightly grease a cake tin (I used a 18 centimetre diameter cake tin).

Pour the mango mousse mixture into the cake tin.

Refrigerate for 3 hours or until the mousse sets.

Serve with fresh fruits.
