Mango Sticky Rice

This recipe is perfect for spring or summer when mangoes are in abundance. If you're like me who cannot pass a quick sale on very ripe mangoes, you have to try this.



mango sticky rice


Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
1 cup glutinous rice
1 cup (or 270ml can) coconut cream
1 mango, sliced
1/4 tsp salt
3 tablespoons sugar
2 pandan leaves

Method
Soak the glutinous rice with cold water for at least 2 hourS. This step is crucial, otherwise your rice would not be moist. The amount of the water should be roughly 2 cm above the rice level.
Do not drain, add more water until it is about 3 cm above the rice level.
Add 1/4 cup of coconut cream, 1 tbsp sugar and 1 pandan leave.
Stir until the coconut cream is evened out.
Bring to a gentle boil under a medium heat then partly cover to let some steam escape for about 20 minutes.
Stir the rice often to make sure it's not sticking to the bottom of the pan.
After the coconut water is all absorbed by the rice, turn off the heat, cover completely and let sit for 10 minutes.
Meanwhile, dissolve the remaining coconut cream with 1/4 cup of water in a small pot and add 2 tbsp sugar, salt and the other pandan leave.
Bring to a gentle boil, until the sugar is dissolved and then turn off the heat.
To assemble, put some sticky rice in a bowl, top with mango and pour over the sauce.
Enjoy hot or cold.
