Mango & Tomato Salsa

With temperatures rising and the sun beginning heat up, try this fresh and colourful summer salsa to protect your skin from the inside out.

One of the richest sources of lycopene, tomatoes are packed with the powerful antioxidant that has been credited with preventing wrinkles and reducing the inflammatory response to UV rays.



Preparation Time: 10 minutes
Makes: 6 servings

Ingredients
1 large mango, peeled and cut into small cubes
2 tomatoes, cut into small cubes
1/2 red onion, finely chopped
2 1/2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
Handful of coriander chopped
Cracked black pepper, to season

Method
Place mango, tomato, onion, lemon juice, olive oil and coriander in a bowl and mix well.

Season generously with cracked black pepper.

Serve the salsa chilled or at room temperature with tortilla chips, or to accompany seafood or chicken.
