This easy, delicious maple balsamic glazed chicken is tender. It is baked with bite sized potato, sweet potato and served with salad and rice. This family friendly lunch or dinner can also be made ahead and barbecued. Enjoy!
Preparation Time: 40 minutes (including time to marinate)
Cooking Time: 15 minutes
Ingredients 2 chicken breasts
1/2 cup maple syrup
1/2 cup tomato sauce
1/4 cup balsamic vinegar
2 tbsp Dijon mustard
1 tbsp lemon juice
1 medium sweet potato, cut into bite sized pieces
2 medium potatoes, cut into bite sized pieces
2 tbsp olive oil
Salt and pepper

Put the maple syrup, tomato sauce, balsamic vinegar, Dijon mustard and lemon juice into a large bowl. Whisk to combine and set aside.
Cut the chicken into 3 cm wide strips and put in the bowl with the marinade. Stir to coat the chicken. Cover and marinate for a minimum of 30 minutes.

Preheat the oven to 200 degrees. Line two baking dishes with baking paper.
While the chicken is cooking, put the potatoes in a saucepan with boiling water. Cook covered on medium heat for 10-12 minutes, adding the sweet potato after 8 minutes. Drain, pat dry and place in a baking dish. Add the olive oil, season with salt and pepper and toss to combine.
Bite sized potatoes bake well
Bake the chicken and potatoes for 12-15 minutes, until cooked through.
While the chicken is in the oven, cook the rice as per packet instructions and prepare a garden salad.
Place the chicken on a plate with a side of salad, potatoes, sweet potatoes and rice. Serve and enjoy.

The chicken can be prepared ahead and marinated overnight.
