Maple Crunch Crisp Cereal

I started on a mission to make my lunchtimes more interesting and that's also inspired me to look at what I make for breakfast. I've been on the hunt for something that would be tasty, healthy and keep me going until lunchtime. This maple crunch crisp cereal is my answer.

I've made up a large batch as it can be stored in an air tight container and is a guaranteed yummy start to the day.

Serving with fresh fruit and yoghurt adds to the vitamin intake as well as blending tastes and textures.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 8-10 servings

70g sliced blanched almonds
200g whole rolled porridge oats
55g sesame seeds
55g sunflower seeds
3 tbsp sunflower oil
7 tbsp maple syrup
50g roughly chopped walnuts
80g roughly diced apricots

Mix together the almonds, oats and seeds.
In large pan, heat the sunflower oil and maple syrup until it has melted together.
Pour the almonds, oats and seeds into the pan and mix well.

Spread the mixture out over an oiled baking sheet.
Place in the oven for 15 minutes.

Sprinkle the walnuts over the top and continue to bake in the oven for another 10 minutes.
Remove from the oven, pour into a bowl, add the apricots and then leave to cool. The maple crunch crisp will harden a little more as it cools.

Serve with your choice of seasonal fresh fruit and a large dollop of natural yoghurt.
