I've always loved matcha - matcha tea, matcha lattes, matcha frozen yogurt, yum. This bitter and earthy flavour pairs perfectly with milk chocolate and white chocolate and the colour is just so fantastic you can't help but feel happy when you are eating them.
Preparation Time: 20 minutes plus chill time
Cooking Time: 20 minutes
Makes: 18 servings
Ingredients 120 g all purpose flour
7.5 g Matcha (green tea powder)
75 g unsalted butter, softened
65 g icing sugar
Pinch of salt
1 large egg yolks
¼ cup white chocolate chips
Cream together the butter, icing sugar, and salt until soft and light.
Add the egg yolk and mix until combined.
Gradually sift in the flour and matcha powder, the more matcha you add, the greener and more bitter it will become.
Fold the white chocolate chips into the dough.
Shape the dough into a log, the diameter of the log will be the diameter of your cookie.
Wrap the log in cling-wrap and place in a bed of rice, this is so your log will stay cylindrical. Chill in the fridge for several hours or place in the freezer for an hour.
Preheat your oven to 150C degrees. Once firm remove the dough from the cling-wrap and cut into even slices, about 1/4 inch is a good size.
Place the rounds on a baking tray lined with baking paper.
Bake for 20-22 minutes then cool on a rack.
