Ingredients 3 cups of pasta shells
1 garlic clove (optional)
Pinch of salt
Paprika (1/4 tspn) (optional)
Za’atar (1/4 tspn)
Chives (1/2 tspn)
Black peppercorns, crushed (1/2 tspn)
Extra virgin olive oil (2 tablespoons)
1 can of tuna
1 can of tinned butter beans
3-4 tablespoons cream cheese (or you can use low fat yogurt)
1 tablespoon of tahini paste (or humus if you don’t have paste)
Boil the pasta for about 10 minutes or till aldente. In the meantime, heat the tinned butter beans in a separate pan on medium heat for 5 minutes till it is warmed well.
Chop the garlic clove and chives. Add to a mixing bowl along with the extra virgin olive oil, salt, pepper, paprika, Za’atar and tahini paste. Mix.
Add tinned tuna.
Add the cream cheese, or yogurt, and mix till smooth.
Wash and drain the beans, add them to the bowl.
Wash and drain the pasta shells. Add them to the bowl.
Mix it all together. And there’s your lunch! (please note, the picture may vary slightly from the recipe i.e. there may not be garlic clove and paprika present).
